Breakfast tortilla recipe

During my week days, breakfast is a rushed afterthought so when the weekend rolls around I absolutely love taking the time to conjure up something a little more creative.


That being said, this delicious breakfast recipe is by no means a chore and can be made in a very short amount of time. It's simply a matter of making up some pico de gallo, heating some beans, grating cheese and frying an egg. Seriously, it's that simple.

This recipe was my first time using a lot of different things. It was my first time baking tortillas and creating the warm, crispy plate which the rest of this dish sat on perfectly. It was my first time making pico de gallo, which I am now a seasoned pro of whipping it up whatever the hour for whatever the dish. Learning how to make pico de gallo has seriously been such a game changer - it's so easy, but tasty as anything. An instant meal elevator.

THE INGREDIENTS
To make 4 tortillas.

4 corn tortillas
2 cups refried beans, warmed in the microwave
1/2 cup grated cheddar cheese
4 fried eggs
2 cups pico de gallo (I follow this Cookie & Kate recipe to make it)
Sasla, as much as desired

THE METHOD
Preheat the oven to 200c and on two baking trays, brush your tortillas on both sides lightly with olive oil. Bake for 10 minutes, turning over half way through.

While the tortillas are baking, fry the eggs.

When the tortillas are finished, remove from the oven and spread warmed refried beans over each tortilla

The place your eggs, pico de gallo, salsa and cheese on each tortilla as desired.
